-RECIPE- PAN FRIED SCALLOP WITH MANGO FRUITY VINEGAR

Add a touch of originality to your scallops with our mango fruity vinegar and some passionfruit.

For 1 serve

  • 3 scallops
  • 1 shallot
  • 2 passionfruit
  • mixed salad
  • 1 lime
  • mango fruity vinegar

Diced finely the shallot. Cook with no coloration in a pan. Set aside

Cut the passionfruit in two and set aside the pulp

Season the scallop with salt and pepper. Heat some olive oil in a pan, then cook the scallop.

Once the scallop cooked, reserve on the side and deglaze the juices in the pan with 2 tablespoon of mango fruity vinegar and the passionfruit pulp. reduce slowly until you get a tablespoon worth of sauce.

Then add the scallop, shallot and a drizzle of olive oil.

Finish the dish with some mixed salad and grated lime zest.
